Moroccan Meatballs

1 lb ground lamb
1 small handful cilantro, chopped finely
1 clove of garlic, minced
1 inch of ginger, graded
zest of one lemon
1 handful of mint, no stems, chopped finely
1 handful of parsley, chopped finely
1/2 cup of bread crumbs
salt and pepper
1 tsp ground cardamom
1/2 tsp ground cinnamon
1/2 tsp sumac or smoked paprika

Combine all ingredients in a bowl. Mix together with hands. Form into small meatballs and pan fry or bake at 350 degrees until they reach an internal temperature of 160 degrees.
