Tomato & Sourdough Soup
2 TBSP Olive oil
1 large onion, chopped
1 tsp cumin seeds
2 crushed garlic cloves
3 cups of stock – veggie or chicken, your choice
4 large ripe tomatoes, chopped
One can diced tomatoes
1 TBSP sugar
1 slice of sourdough bread
Heat oil in a medium saucepan. Add onion and cook 5 minutes until translucent. Add cumin and garlic. Cook 2 more minutes.
Add stock, both tomatoes, sugar, 1 tsp salt and pepper.
Simmer 20 minutes. Add bread – torn into chunks cook 5 more minutes.
Blitz with a blender and serve with fresh cilantro.
